If you grow your own tomatoes, you are bound to have some green tomatoes at the end of the season! Some years more, some years less. Either way, green tomatoes do not go to waste or the compost bin on my watch! This green tomato salsa verde recipe is perfect to use them up in a delicious way! We have previously been buying this tomatillo salsa but this homemade green tomatoes salsa has totally replaced it, at least until we run out of our freezer stash!
It has the subtle tang of green tomatoes, slightly spicy with a hint of lime. This green salsa is perfect as a side dip to meats or roasted veggies or even used as a base or seasoning for pasta or stir fry dishes. We have been making it on repeat this year.

This is my method of preserving the green tomatoes harvest at the end of the season so that I use it all year round in adidtion to fresh ingredients. I am not into canning because as an urban homestead, I do not have the space or time for it. But a quick prep and freeze is what works for me to then have fresh salsa on the table whenever I want. Roasting them really ups the flavour profile but also saves space in the freezer.
Roasting green tomatoes
Once washed, cut away the damaged parts either by blight or slugs.
You can use tomatoes in any unripe stage, from fully green to almost ripe.
Preheat the oven to 220 degrees C / 420 F.
Then cut the tomatoes in equal pieces and fill an oven tray.
Season with salt and spices of your choice. I use aprox. 1 tsp sea salt & 1 tsp ground cumin.
Ground coriander, garlic and onion powder could be good additions.
Roast them for 30-35minutes until edges are browned.
Let to cool then pack them in a freezer bag and freeze flat, check after 1h to break it up as needed.
You can also freeze by cup weight to make it easier to use for the salsa.
When you are ready to make the salsa, make sure to defrost early in the day 1 cup worth of roasted tomatoes.
Green tomatoes salsa
Ingredients
- 1 cup defrosted roasted green tomatoes
- 1/2 small onion finely chopped
- 2 cloves garlic grated or finely chopped
- 1 lime juice (2 tbsp) can also use lemon
- 1 jalapeno or any other chilli
- 3 tbsp frozen chopped cilantro or small fresh handful
Instructions
- Add in the food processor or nutribullet all the ingredients and blend to your desired consistency. I did half minute then scrape down the sides then a bit more. We like to keep some texture and able to see specks of cilantro. If using fresh cilantro finely chop it prior to adding to the food processor.
- Transfer into a clean jar. Can be kept refrigerated for up to a week but never lasts that long, so soo good! Enjoy
